Holywater opened below Reade Street in Tribeca in May 2022, the sixth restaurant from brothers Alex and Miles Pincus, who built their reputation on the floating restaurant Grand Banks and a handful of other waterside spots around the city. Here the nautical theme stays on dry land. A densely decorated basement bar packed with maritime artifacts and found objects, serving New Orleans dishes like gumbo and crawfish etouffee alongside towers of oysters from chef Kerry Heffernan. The Pincus brothers reportedly held onto the name for nearly a decade before finally opening it, a fitting bit of patience for two guys devoted to boats.
