Una Pizza Napoletana

Una Pizza Napoletana is the life's work of Anthony Mangieri, who started making pizza as a teenager in New Jersey and opened the first Una around 1996 as a six-table spot near Point Pleasant Beach that grew entirely by word of mouth. The pizzeria followed him to New York, out to California, and back again, landing at 175 Orchard Street on the Lower East Side. Mangieri still makes every dough himself from just flour, water, salt, and natural sourdough starter, adjusting the recipe day to day and never writing it down. He bakes every pie, so the restaurant opens only a few nights a week, and not at all if he is sick. The New York Times called it the finest sit-down pizza in the five boroughs, and the Italian guide 50 Top Pizza has named it the best pizzeria in the world.
