Chef Andrew Carmellini opened The Dutch on Sullivan Street in SoHo in 2011, framing it as an American restaurant and oyster room that pulled together Southern, New England, and diner influences into one menu rather than sticking to a single regional identity. It quickly became one of downtown's buzzier tables, known for its fried chicken, pie program, and raw bar, and helped establish Carmellini as a dominant force in SoHo dining under their NoHo Hospitality Group. It remains open in the same Sullivan Street space today, still serving the same eclectic American menu more than a decade in.
