Restaurateur Kyle Hotchkiss Carone, culinary director Carolina Santos-Neves, and chef Ashley Rath (a veteran of Lalou and Santina) opened Saint Theo's in the West Village in 2021, building a trattoria around the coastal cooking of Italy's many shorelines with a particular lean toward Venice. Designer Martin Brudnizki gave the dining room its green-accented, Murano-glass look, setting the stage for a menu of crudo, caviar, grilled branzino, and handmade pasta alongside Venetian cicchetti at aperitivo hour. It's developed a bit of a cult following for a secret bar tucked behind the main dining room, adding a speakeasy layer to what's otherwise a fairly polished neighborhood Italian spot.
