Rubirosa opened on Mulberry Street in Nolita in 2009, founded by Angelo "AJ" Pappalardo, whose family had already run Joe & Pat's Pizzeria on Staten Island since 1960. AJ trained at the Culinary Institute of America and cooked at Osteria del Circo and Esca before bringing a thinner, more modern take on his family's pizza into Manhattan. Its Tie Dye Pizza, a tableside pesto spiral swirled over vodka and marinara sauces, has become the restaurant's calling card since debuting in 2011. After AJ's unexpected death in 2015, his sister Maria and father Joe have kept the restaurant, and its Sunday sauce, running in his name.
