Cody Pruitt and chef Max Mackinnon opened Libertine in the West Village in May 2024, building a French bistro around the idea of 'elevated French grandma food' rather than the more familiar Parisian classics most New York bistros lean on. The seasonal, greenmarket-driven menu rotates through regional French inspirations. Normandy and Alsace in winter, Burgundy and Lyon in summer, with dishes like a lobster-and-fish-mousse-stuffed cabbage and chicken with wild mushrooms in vin jaune. It's a more regionally adventurous take on French bistro cooking than most of its West Village neighbors attempt.
