Joe's Shanghai opened in Flushing, Queens, in 1995, when chef Joe Si and restaurateur Barbara Matsumura introduced many New Yorkers to xiaolongbao: delicate Shanghai soup dumplings, each filled with pork or crab and a mouthful of hot broth. The dumplings became a phenomenon, drawing lines to its bustling Pell Street dining room in Chinatown, where strangers share big round tables and learn to bite, sip, and slurp. Joe Si still owns the restaurant today, and the soup dumplings that made it famous remain the reason nearly every table orders a steamer basket or two.
