Shigemi Kawahara founded Ippudo in Fukuoka, Japan in 1985, naming it 'one wind hall' after his ambition to blow fresh wind through a struggling regional ramen industry; it grew into one of Japan's best-known tonkotsu ramen chains before making its first move outside the country. The East Village location, which opened in 2008, was Ippudo's first restaurant outside Japan and quickly became one of the city's most-talked-about ramen destinations, known for long lines and its rich, milky pork-bone broth. A second Midtown West location followed in 2013, cementing Ippudo's foothold in a city that had little serious ramen culture before it arrived.
