Balthazar II
Keith McNally opened Balthazar on Spring Street in SoHo in April 1997, recreating a Parisian brasserie down to the peeling brass mirrors and red leather banquettes inside a former tannery building. It became an instant downtown institution, eventually serving around 1,500 guests a day across just 180 seats, and it's hosted its share of famous moments, including Jerry Seinfeld's 1999 marriage proposal. McNally later brought the concept to London, but the SoHo original remains the flagship - one of the restaurants most responsible for cementing his reputation as the architect of a certain kind of New York brasserie revival.
